This coffee has been produced by Sebastian Gomez on his private farm called Finca La Divisa within the township of Armenia, in the state of Quindio, 250kms east of Bogota.
This lot is made up exclusively of the pink bourbon varietal and has been processed in the natural method, with an added twist.

Once cherries have been meticulously selected for ripeness, they are gathered and held in large tubs where they enter a stage of carbonic masceration, a process borrowed from the wine making industry. This process adds incredibly unique flavour attributes to the final cup.

Expect some sparkly fun, green apple style acidity, gummy sweetness with a super clean finish.
